Tomato, Egg, & Avocado Stack
Tomato season is my favorite! Chances are you (or someone close to you) may have garden-fresh tomatoes hanging around during this magical time.
I have a delicious recipe to share for those beautiful garden-fresh tomatoes (or the heirloom tomatoes in the off-season)! It is super simple, low calorie, and a great way to start your day.
Ingredients
1 Medium/Large tomato (cut into thick slices)
1 Egg prepared however you like (fried, scrambled, boiled, etc.)
1/2 medium avocado (sliced or mashed)
Dash of salt & pepper to taste
Directions
Stack ingredients on your plate. Tomatoes first, then egg and avocado. Season with a little salt and pepper (or any seasoning that you love) and that's it! If your tomatoes are sturdy enough, you can eat them like a sandwich or just grab a fork and enjoy!
Total calories = approximately 220
LUNCH IDEA: TAKE AWAY THE EGG AND ADD HUMMUS OR TURKEY. LIKE A SANDWICH BUT NO BREAD.
