Protein Balls

The perfect mindful snack! These balls are full of energy, good fat, and protein. One ball is approx. 80-120 Calories (depends on the size). You will no longer need to buy pre-packaged bars again!

I make these balls weekly for our family and if we run out, everyone notices. Incorporating these balls or something like protein balls into your diet is a huge step towards cutting down on costs, reducing your carbon footprint, eating mindfully, and having a plan so that you are never without fuel. Remember, one of the most important steps towards your body trusting you and working efficiently is to keep it fueled properly. 

Ingredients

1/2 C Peanut Butter 

1/4 C Coconut oil 

1/4 C honey 

1/4 C golden monk fruit (optional- if not using I would increase the honey to 1/3 cup)

2 scoops protein powder 

1/4 C Chia seeds 

Up to 2 C oats (Start by adding 1 cup at a time. Depending on your oats, you may need more or less than 2 cups.  I find quick oats make the best texture but all oats with the exception of steel cut will work).

1/4 C cocoa nibs or mini choc chips

Directions

Combine wet ingredients into a glass bowl. Microwave for about 20-30 seconds. Mix well and add chia seeds and protein powder. Add more honey or monk fruit to taste and add oats slowly, 1 cup at a time. Mix well. If mixture is too dry, toss in some water, just a little bit at a time, until you reach your desired consistency.

Keep refrigerated - these are best when cold.
