Protein Balls
I make these balls weekly for our family and if we run out, everyone notices. Incorporating these balls or something like protein balls into your diet is a huge step towards cutting down on costs, reducing your carbon footprint, eating mindfully, and having a plan so that you are never without fuel. Remember, one of the most important steps towards your body trusting you and working efficiently is to keep it fueled properly.
Ingredients
1/2 C Peanut Butter
1/4 C Coconut oil (avocado or olive oil works too)
1/4 C honey
2 scoops protein powder
1/4 C Chia seeds
2 C quick oats or regular rolled oats (pulse in blender to break up oats). Start by adding 1 cup at a time. Depending on your oats, you may need a little more than 2 cups.
1/4 C cocoa nibs or mini choc chips
Directions
Combine wet ingredients into a glass bowl. Microwave for about 20-30 seconds or just mix throughly until coconut oil is spread evenly and no lumps. Mix well and add chia seeds and protein powder and mix until creamy whipped texture. Add more honey if needed to taste and add oats slowly, 1 cup at a time. Mix well. If mixture is too dry, toss in some water (spray bottle works like magic), just a little bit at a time, until you reach your desired consistency.
I like to roll 1oz balls. Approx. calories are 110 depending on what brands/products you use.
Keep refrigerated - these are best when cold.
