Mock "Mashed Potatoes"

You won’t miss the potatoes, I promise.

The cauliflower takes its place beautifully. The creamy texture and garlic kick make this dish perfect for your next comfort-food dinner. It is seriously so good, it just might become a favorite in your house!

serves 6:  115 Calories per serving

Ingredients

2 large head cauliflower

2 tablespoons cream cheese, softened

1/4 cup grated Parmesan

1 teaspoon garlic, minced

2 tablespoon butter, softened

1/2 teaspoon salt (or more to taste)

1/4 teaspoon freshly ground black pepper

1 teaspoon chopped fresh or dry chives, cilantro, or parsley for garnish


Directions

Bring a large pot of water to boil over high heat.

Wash and cut cauliflower into small pieces. Cook in boiling water for approximately 5-7 minutes, or until soft.  Drain well; pat cooked cauliflower dry (I use Micro fiber towels). If you're in a hurry, you can always carefully squeeze the water out with a towel, just be careful with your hands.

Puree the cauliflower (while it's still hot) with the cream cheese, Parmesan, garlic, salt, and pepper until almost smooth. You can use a blender, (I use my Blendtec and LOVE It), immersion blender, or food processor. You can also do this by hand if you like a chunky texture.

Garnish with herbs of your choice.
